‘Bharwa’ in English means to ‘fill’. This particular recipe is inspired from my mother in law’s Sindhi kitchen. The best part of being married in a cultural community different than my own was that I was suddenly being introduced to these unique and new combinations of existing spices to prepare signature dishes. One such spice mix that left me wanting for more is the blending of roasted chickpea flour with traditional whole spices to prepare a filling for sliced eggplants, okra, potato etc.. Each time I visit India, my MIL bids me farewell with a jar of this mix as a parting gift

- Slit vegetables and fill it with the Sindh Bhurwan blend before cooking.
