Stuffed Chili goodness as a side snack to a hot cup of chai – one for those rainy monsoon days
Healthy, colorful and completely addictive parmesan squash & eggplant bites make for a perfect side. Seasoned with our Best seller All Purpose Master Spice blend that turn these veggies into a real crowd-pleaser.
* 1 zucchini, 1 squash 1 eggplant medium-sized trimmed, sliced and dried⠀
* 1 bag of mushrooms or 2 cups minced ⠀
* 1 cup of red bell pepper sliced thin⠀
* 1/2 cup of chopped onions (optional) ⠀
* 1 cup marinara sauce⠀
* 3 tbsps olive oil⠀
* 2 tbsps Master spice blend ⠀
* 1/2 cup freshly grated cheese⠀
* Salt , freshly ground pepper , parsley etc⠀
1. To make the Baked Parmesan Zucchini Bites: Preheat oven to 425ºF (220ºC) and line a baking sheet with parchment paper or aluminum foil. Wash, dry, and cut zucchini, yellow squash eggplant into ¼ inches thick slices. Arrange the slices on the prepared baking sheet.⠀
2. Drizzle slices with olive oil, then top with marinara, mushroom, pepper seasoned in master spice blend, and finally sprinkle grated cheese.⠀
3. Bake the bites in the oven for 15 -20 mins, until tender and cheese is melted. Remove the baked bites from the oven & serve immediately, sprinkled with chopped parsley or basil if you like. Enjoy!⠀
(Alternatively you can also cook on a grill or non stick pan on the stove -10 mins on each side) ⠀
